Limes are available year-round, but their peak of true freshness falls between May and October, so seek out local limes during this time. Two versions of sour limes exist: Tahitian limes, including the seedless kind; and Key limes, those that are smaller and more acidic than others. Enjoy fresh lime juice, zest, and wedges in an array of cooking, from meats to salads and smoothies to desserts.
