Key Lime Pie recipe
According to culinary lore, the key lime pie recipe was created with the advent of condensed milk in the 1800s. A modern version uses sweet and creamy coconut milk instead, which lends an ultra-tropical taste and appeal.
Ingredients:
1 ½ cups crumbled graham crackers
5 tablespoons butter, melted
2 tablespoons sugar
1 (15-ounce) can coconut milk
½ cup key lime juice
3 egg yolks
1 cup heavy whipping cream
2 tablespoons sugar
1 tablespoon fresh lime zest
Directions:
1. Preheat oven to 375°F.
2. In a medium bowl, combine graham crackers, butter, and sugar; mix well with hands and press into a 9-inch pie pan. Bake until golden, 18 to 20 minutes; remove and cool to room temperature.
3. Lower oven to 325°F.
4. Combine coconut milk, lime juice, and eggs in a large bowl. Whisk until well blended and pour evenly into prepared pie shell. Bake 15 minutes, until filling is set. Cool to room temperature and place in refrigerator to chill at least 2 hours.
5. In a large bowl, beat whipping cream until soft peaks form. Fold in sugar and lime zest and whisk to blend. Spread evenly over chilled pie, slice, and serve.
